Ho, ho, ho! Advent with a difference

Advent season with a difference – Mango coconut rice

Advent is here, and while everyone's baking cookies and sipping mulled wine, I have a recipe for you that has absolutely nothing to do with Christmas—but that's exactly why it's perfect for escaping the holiday madness. Ready for a culinary break? Then let's get started!

Exotic mango coconut rice

Ingredients:

  • 200 g jasmine rice
  • 400 ml coconut milk
  • 2 ripe mangoes
  • 2 tablespoons sugar
  • 1 pinch of salt
  • Fresh mint leaves for garnishing

Preparation:

  1. Wash the rice thoroughly until the water runs clear.
  2. Heat coconut milk in a saucepan, add sugar and salt and stir well.
  3. Add the washed rice to the coconut milk, bring to a boil and then reduce the heat.
  4. Simmer the rice over low heat for about 15-20 minutes until it has absorbed the liquid and is tender.
  5. In the meantime, peel the mangoes and cut the flesh into thin slices.
  6. Arrange the coconut rice on plates, garnish with the mango slices and decorate with fresh mint leaves.
